I love miniature food. I also love cake. You can imagine my excitement when I was invited to join the Donsuemor Dessert a Day challenge. The folks at Donsuemor were kind enough to give me some French Almond Cakes to use in a recipe of my creation.

Since Dessert a Day is in October, I thought it was only fitting to use some fall ingredients in this recipe.
As soon as I saw these little cakes, the first thing that came to mind was pumpkin pie. I decided to take these mini yum yums and turn them into tiny pumpkin pies. Here’s how I did it.
Donsuemor French Almond {Pumpkin} Cakes
Ingredients:
- 1 can pumpkin puree
- Cinnamon, nutmeg, sugar
- Evaporated milk
- Paper baking cups
- Cupcake Pan
- Whipped cream
Directions:
Start by gently scooping out the top of the cakes, as shown below:

Then, with a knife, gently scrape some of the excess cake to create a little well for your pumpkin filling. {My baby LOVED eating the left over almond cake crumbles!}

Put each of the almond cakes into a paper baking cup. Prepare your pumpkin pie filling by following the directions on the pumpkin puree.

Using an ice cream scoop, fill each almond cake with the pumpkin pie filling.

Bake following the directions on the pumpkin puree, checking doneness using a toothpick. Once they’re cooled, you can either leave them in the baking cups or remove them.
I removed mine from the cups and served them with whipped cream and topped them with the remaining almond slices. The cake was super moist and full of almond goodness. The pumpkin filling was warm and reminded me of a crisp fall day. The almonds were a great texture contrast to the soft pumpkin filling.
They were nothing short of awesome!
